Description

Ingredients

  • 20 oz ( 1 ¼ lbs ) boneless, skinless chicken breasts
  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • freshly ground pepper to taste
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  • Dry the chicken breasts with a paper towel and cut them into 1-inch pieces.
  • Place the chicken in a bowl and sprinkle flour, basil, paprika, oregano, salt, and pepper on top. Toss until well coated.
  • Heat a large cast iron skillet over medium-high heat, adding olive oil and 1 tbsp of butter. Once hot, add the chicken in a single layer.
  • Cook the chicken for about 3 minutes without moving, then flip and cook for an additional 2 minutes.
  • Add the remaining butter, minced garlic, and parsley. Cook for one more minute until the chicken is fully cooked.
  • Serve immediately while hot, either on its own or with sides like rice, pasta, or salad.

Notes

Chicken can be cut into smaller pieces for quicker cooking.
Adjust seasoning to taste if preferred spicy or herbaceous.
Serve with a squeeze of lemon for extra flavor.
