Description

Ingredients

  • 1 ½ pounds Brussels sprouts
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 pound thick-cut bacon
  • 2 large yellow onions
  • 2 large (or 6 small) shallots
  • 2 teaspoons garlic
  • ½ cup light brown sugar
  • ¼ cup maple syrup
  • ⅓ cup apple cider vinegar
  • 1 teaspoon chili powder (optional)

Instructions

  • Preheat your oven to 450°F and line a large baking sheet with parchment paper.
  • Place cleaned, halved Brussels sprouts on the prepared baking sheet. Whisk olive oil, salt, and pepper in a bowl, then drizzle over Brussels sprouts, tossing gently.
  • Roast the Brussels sprouts for 20-25 minutes until tender and golden brown.
  • In a large skillet, cook diced bacon over medium heat until crispy, about 8-10 minutes. Transfer to a plate lined with paper towels.
  • In the remaining bacon grease, add chopped onions and shallots. Cook on medium-low until caramelized, about 15-20 minutes.
  • Stir in minced garlic, brown sugar, maple syrup, apple cider vinegar, and cooked bacon. Let it bubble together for 5 minutes.
  • Toss the roasted Brussels sprouts with the bacon jam until evenly coated, cooking for another 2 minutes to heat through.
  • Serve warm on a platter.

Notes

For gluten-free, ensure bacon and ingredients are certified gluten-free.
Use firm, fresh Brussels sprouts for best results.
Adjust seasoning to taste, especially salt and pepper.
