- 1 pound thick-cut bacon
- 2 large yellow onions
- 2 large (or 6 small) shallots
- 2 teaspoons garlic
- ½ cup light brown sugar
- ¼ cup maple syrup
- ⅓ cup apple cider vinegar
- 1 teaspoon chili powder (optional)
Instructions
- Preheat your oven to 450°F and line a large baking sheet with parchment paper.
- Place cleaned, halved Brussels sprouts on the prepared baking sheet. Whisk olive oil, salt, and pepper in a bowl, then drizzle over Brussels sprouts, tossing gently.
- Roast the Brussels sprouts for 20-25 minutes until tender and golden brown.
- In a large skillet, cook diced bacon over medium heat until crispy, about 8-10 minutes. Transfer to a plate lined with paper towels.
- In the remaining bacon grease, add chopped onions and shallots. Cook on medium-low until caramelized, about 15-20 minutes.
- Stir in minced garlic, brown sugar, maple syrup, apple cider vinegar, and cooked bacon. Let it bubble together for 5 minutes.
- Toss the roasted Brussels sprouts with the bacon jam until evenly coated, cooking for another 2 minutes to heat through.
- Serve warm on a platter.
