- 2 cups heavy cream cold
- ¾ cup granulated sugar
- 1 vanilla extract
- 2 tablespoon vanilla instant pudding

- 1 lbs mascarpone cheese room temp
- 27 ladyfingers
- 1 cup espresso
- 2 tablespoon irish cream
- 2 tablespoon cocoa powder
Instructions
- In a large mixing bowl, combine cold heavy cream, sugar, Irish cream, vanilla extract, and vanilla pudding. Mix with an electric hand mixer until soft peaks form.
- Gently fold in room-temperature mascarpone cheese until smooth, taking care not to overmix.
- In a shallow bowl, mix espresso and Irish cream. Quickly dip ladyfingers in the coffee mixture for 1-2 seconds and place them in a 13 by 9-inch baking dish in an even layer.
- Spread half of the mascarpone mixture over the soaked ladyfingers evenly using a spatula.
- Add another layer of dipped ladyfingers on top, then smooth a thin layer of mascarpone cream over them.
- Using a piping bag with a round tip, pipe dollops of the remaining cream over the thin mascarpone layer.
- Cover with plastic wrap and refrigerate for at least 4 hours to allow ladyfingers to soften. Before serving, dust generously with cocoa powder.
Notes
Ensure heavy cream is cold for better whipping results.
Do not let ladyfingers soak too long in the espresso mixture to maintain structure.
If you prefer a stronger coffee flavor, increase the espresso quantity.
