Ingredients
Scale
- 2 ½ cups all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter
- 1 cup packed brown sugar
- ½ cup sugar
- 1 large egg
- 2 large egg yolks
- 3 teaspoons vanilla extract
- 10 ounces chocolate chips, milk or semi-sweet, your choice!
- flaked salt, for topping
Instructions
- Preheat your oven to 350 degrees F.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- Heat a 12-inch oven-safe skillet (preferably cast iron) over low heat for 5 minutes. Melt the butter in the skillet, then mix in the sugars using a wooden spoon. Turn off the heat.
- In a separate bowl, whisk the egg and yolks together. Quickly add this to the skillet mixture and stir immediately to avoid cooking the eggs. Mix in the vanilla extract.
- Gradually mix in the dry ingredients until just combined. This mixture will be thick; a damp paper towel can help clean the skillet sides if necessary.
- Gently fold in the chocolate chips. Bake the cookie in the skillet for 20 to 25 minutes, until it is mostly set in the middle. Top with flaked sea salt before serving.
- Serve warm with a scoop of vanilla ice cream.
Notes
For an even richer flavor, consider using a mix of milk and semi-sweet chocolate chips.
Be careful not to overbake; the cookie should be slightly underbaked in the center to maintain its gooey texture.
