Description

This Chicken Cheddar Noodle Bake combines tender chicken, rich cheese, and noodles for a comforting meal. Easy to make and great for family dinners!


Ingredients

  • 2 to 3 tablespoons olive oil
  • 2 stalks celery, chopped
  • 1 red bell pepper, chopped
  • 1 medium onion, chopped
  • 1 tablespoon garlic, minced
  • 2 (10.5-ounce) cans cream of chicken soup
  • 1 cup half and half cream
  • 2 cups sharp cheddar cheese, shredded
  • 3 cups cooked egg noodles
  • 1½ pounds cooked and shredded chicken breast
  • 1 tablespoon parsley
  • Salt and pepper, to taste
  • 1 sleeve Ritz crackers
  • 1 cup sharp cheddar cheese, shredded
  • 4 tablespoons butter, melted

Instructions

  • Preheat oven to 350°F (175°C) and grease a baking dish.
  • Heat olive oil in a Dutch oven, add celery, bell pepper, and onion; sauté for 5-6 minutes.
  • Add minced garlic, then mix in cream of chicken soup and half-and-half, cooking until heated.
  • Stir in cheddar cheese until melted and creamy.
  • Fold in cooked egg noodles and shredded chicken; mix well.
  • Pour mixture into prepared baking dish and spread evenly.
  • Crush Ritz crackers, mix with melted butter and cheese, then top the casserole.
  • Bake uncovered for 15 minutes or until golden brown and bubbly.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge.
Freeze prior to baking for up to 3 months; thaw overnight before reheating.
