This Chicken Cheddar Noodle Bake combines tender chicken, rich cheese, and noodles for a comforting meal. Easy to make and great for family dinners!
Ingredients

- 2 to 3 tablespoons olive oil
- 2 stalks celery, chopped
- 1 red bell pepper, chopped
- 1 medium onion, chopped
- 1 tablespoon garlic, minced
- 2 (10.5-ounce) cans cream of chicken soup
- 1 cup half and half cream
- 2 cups sharp cheddar cheese, shredded
- 3 cups cooked egg noodles
- 1½ pounds cooked and shredded chicken breast
- 1 tablespoon parsley
- Salt and pepper, to taste
- 1 sleeve Ritz crackers
- 1 cup sharp cheddar cheese, shredded
- 4 tablespoons butter, melted
Instructions
- Preheat oven to 350°F (175°C) and grease a baking dish.
- Heat olive oil in a Dutch oven, add celery, bell pepper, and onion; sauté for 5-6 minutes.
- Add minced garlic, then mix in cream of chicken soup and half-and-half, cooking until heated.
- Stir in cheddar cheese until melted and creamy.
- Fold in cooked egg noodles and shredded chicken; mix well.
- Pour mixture into prepared baking dish and spread evenly.
- Crush Ritz crackers, mix with melted butter and cheese, then top the casserole.
- Bake uncovered for 15 minutes or until golden brown and bubbly.
Notes
Store leftovers in an airtight container for up to 3 days in the fridge.
Freeze prior to baking for up to 3 months; thaw overnight before reheating.
