Ingredients

  • 1 pound ground chicken
  • 1 egg
  • ½ cup panko breadcrumbs
  • ½ cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • 1 tablespoon fresh basil (minced)
  • ½ teaspoon salt
  • Black pepper to taste
  • 2 cups marinara sauce of choice
  • 1 cup shredded mozzarella cheese
  • Fresh basil (chiffonaded, optional)
  • ½ cup panko breadcrumbs for topping
  • 2 tablespoons butter
  • Pinch of salt

Instructions

  • Toast buttered breadcrumbs in a skillet until golden brown; set aside.
  • In a bowl, mix ground chicken, egg, breadcrumbs, cheese, oil, and spices until combined; form into meatballs.
  • Brown meatballs in a skillet with oil until golden on all sides.
  • Add marinara sauce to skillet, simmer with meatballs until cooked through.
  • Top meatballs with mozzarella cheese, cover, and let melt.
  • Sprinkle buttered breadcrumbs over the top; serve warm.

Notes

Substitute ground turkey for chicken if desired.
Using fresh herbs enhances flavor; consider fresh oregano or parsley.
Freezing uncooked meatballs allows for quick future meals.
