- 1½ lbs lean ground beef
- 1½ tsp salt
- ¼ tsp black pepper
- 1 egg
- 1 tbsp dried minced onion
- ½ cup breadcrumbs
- 1 tbsp olive oil
- 3 tbsp all-purpose flour
- 1 15 oz can diced tomatoes with juices
- 1 cup water
- ½ tsp salt
- 2 tsp granulated sugar
- 1 tsp dried basil leaves
- 1½ lbs baby potatoes
- 1 cup carrots
- 1 medium yellow onion
- 2 celery stalks
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, mix ground beef with salt, pepper, egg, dried onion, and breadcrumbs, forming meatballs.
- Brown meatballs in a skillet over medium-high heat.
- In a bowl, whisk together flour, diced tomatoes, water, salt, sugar, and basil for the sauce.
- Layer potatoes, carrots, onion, and celery in a baking dish.
- Add meatballs on top and pour sauce evenly over the dish.
- Cover and bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes until done.
- Let sit before serving.
Notes
For gluten-free, substitute breadcrumbs and flour with alternatives.
Consider adding Worcestershire sauce for extra flavor in the meat mixture.
