Ingredients

  • 1½ lbs lean ground beef
  • 1½ tsp salt
  • ¼ tsp black pepper
  • 1 egg
  • 1 tbsp dried minced onion
  • ½ cup breadcrumbs
  • 1 tbsp olive oil
  • 3 tbsp all-purpose flour
  • 1 15 oz can diced tomatoes with juices
  • 1 cup water
  • ½ tsp salt
  • 2 tsp granulated sugar
  • 1 tsp dried basil leaves
  • 1½ lbs baby potatoes
  • 1 cup carrots
  • 1 medium yellow onion
  • 2 celery stalks

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix ground beef with salt, pepper, egg, dried onion, and breadcrumbs, forming meatballs.
  • Brown meatballs in a skillet over medium-high heat.
  • In a bowl, whisk together flour, diced tomatoes, water, salt, sugar, and basil for the sauce.
  • Layer potatoes, carrots, onion, and celery in a baking dish.
  • Add meatballs on top and pour sauce evenly over the dish.
  • Cover and bake for 45 minutes, then remove the foil and bake for an additional 15-20 minutes until done.
  • Let sit before serving.

Notes

For gluten-free, substitute breadcrumbs and flour with alternatives.
Consider adding Worcestershire sauce for extra flavor in the meat mixture.
