Instructions
- Preheat your oven to 350°F and line an 8×8-inch baking dish with parchment paper or grease it well.
- Blend the cottage cheese in a blender or food processor until smooth, resembling thick yogurt. Set aside.
- In a large mixing bowl, whisk together the eggs, vanilla extract, coconut sugar, and maple syrup. Mix in the blended cottage cheese until fully combined.
- Incorporate the almond flour, cacao powder, and baking soda, mixing until you achieve a smooth brownie batter.
- Gently fold in the chocolate chips, reserving a few for topping if desired.
- Spread the batter evenly into the prepared baking dish and sprinkle with remaining chocolate chips.
- Bake for about 24–26 minutes, or until a toothpick inserted comes out with a few moist crumbs, ensuring a fudgy texture.
- Allow the brownies to cool in the pan for at least 15–20 minutes before cutting to let them set.
