Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon garlic powder
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1.5 pounds baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary or thyme
  • Salt, to taste
  • Black pepper, to taste

Instructions

  • Preheat the oven to 425°F (220°C). Prepare a large baking sheet with parchment paper.
  • Combine baby potatoes with olive oil, garlic powder, rosemary or thyme, salt, and black pepper in a bowl.
  • Arrange the seasoned potatoes in a single layer on the baking sheet and roast for 25-30 minutes, turning halfway through.
  • Season chicken breasts with salt, black pepper, and garlic powder.
  • Sear the chicken in a skillet with olive oil for 4-5 minutes on each side until golden. Remove and set aside.
  • Sauté minced garlic in the skillet for 1 minute until fragrant.
  • Add chicken broth, scrape up browned bits, and let it simmer for 2-3 minutes.
  • Stir in heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning, simmer until the sauce thickens slightly.
  • Return chicken to the skillet, spoon sauce over it, and heat through for about 2-3 minutes.
  • Serve the chicken alongside roasted potatoes, garnish with parsley if desired.

Notes

Store leftovers in an airtight container for up to 4 days in the refrigerator.
For freezing, use freezer-safe containers and consume within 3 months.
Reheat gently at 350°F (175°C) for 15-20 minutes.
