Ingredients

  • 8 oz crimini mushrooms
  • Salt and pepper
  • 16 oz potato gnocchi
  • ½ cup chicken broth
  • 1 cup heavy cream
  • 4 cloves garlic, minced
  • ½ teaspoon Italian seasoning
  • ½ teaspoon smoked paprika
  • 5 oz fresh spinach
  • ¼ teaspoon salt, to taste
  • Coarsely ground black pepper, to taste
  • Red pepper flakes, to taste

Instructions

  • Heat olive oil in a skillet over medium-high heat.
  • Sauté mushrooms with salt and pepper until browned. Reserve half.
  • Add gnocchi, chicken broth, cream, garlic, Italian seasoning, and smoked paprika to the skillet. Bring to a boil.
  • Stir in spinach and cook until wilted, about 5 minutes.
  • Season with salt, pepper, and red pepper flakes. Top with reserved mushrooms.
