Crispy Black Bean Quesadillas are a quick and delicious meal that combines flavorful black beans, melted cheese, and zesty salsa, perfect for busy weeknights.

- 1 15 oz can black beans, rinsed and drained
- 1 cup shredded cheddar cheese
- ½ cup salsa
- ½ tsp chili powder (or taco seasoning)
- 6 medium flour tortillas
- Cooking spray or a little butter/oil for brushing
Instructions
- Preheat oven to 425°F and prepare a baking sheet with parchment paper and cooking spray.
- Mash half of the black beans in a medium bowl and mix with the remaining whole beans, cheese, salsa, and chili powder.
- Place three tortillas on the baking sheet and spread the bean mixture over them, topping with a second tortilla.
- Brush tops with oil or melted butter and bake for 15-17 minutes until golden and cheese is melted.
- Remove, let cool, slice into wedges, and serve with sour cream, guacamole, or extra salsa.
Notes
You can substitute black beans with pinto beans for a different flavor.
Corn tortillas can be used for a gluten-free option.
