Description

These crispy smashed potatoes with garlic & za’atar are incredibly delicious! Perfectly roasted and seasoned, they’re great as a side for any meal. Enjoy the rich flavors of olive oil, fresh herbs, and zesty lemon that make this dish a comfort food favorite.


Ingredients

  • 1 lb baby potatoes
  • 1/4 cup olive oil
  • 1 tbsp za’atar spice
  • 1/4 cup fresh parsley, chopped
  • 1/4 tsp salt
  • 1 tsp lemon zest
  • 1/4 cup tahini (sesame paste)
  • 1 chipotle pepper in adobo sauce + 2 tbsp of the adobo sauce
  • 1/4 cup cold water
  • 1 clove garlic
  • 1 tbsp lemon juice
  • Salt to taste

Instructions

  • Boil a large pot of water and cook the potatoes for 15-20 minutes until fork tender.
  • Drain the potatoes and transfer them to a large bowl.
  • Preheat your oven to 400°F (200°C).
  • In the bowl, drizzle the olive oil over the potatoes and add za’atar, salt, lemon zest, and parsley. Toss gently to mix everything together.
  • Spread the tossed potatoes onto a large baking sheet, then smash each potato flat with the bottom of a glass.
  • Bake in the preheated oven for 20 minutes. After this, flip each potato over and return to bake for an additional 15 minutes.
  • While the potatoes are baking, prepare the chipotle tahini by blending tahini, chipotle pepper, adobo sauce, cold water, garlic, and lemon juice until smooth.
  • Once the potatoes are done, drizzle the chipotle tahini over them, garnish with fresh parsley, and serve immediately.

Notes

For extra crispiness, consider broiling the potatoes for a few minutes at the end of the baking time.
The chipotle tahini can also be used as a dip for vegetables or spread on sandwiches.
Feel free to adjust the amount of za’atar based on your taste preference.
