Ingredients
Scale
- 1 lb baby potatoes
- 1/4 cup olive oil
- 1 tbsp za’atar spice
- 1/4 cup fresh parsley, chopped
- 1/4 tsp salt
- 1 tsp lemon zest
- 1/4 cup tahini (sesame paste)
- 1 chipotle pepper in adobo sauce + 2 tbsp of the adobo sauce
- 1/4 cup cold water
- 1 clove garlic
- 1 tbsp lemon juice
- Salt to taste
Instructions
- Boil a large pot of water and cook the potatoes for 15-20 minutes until fork tender.
- Drain the potatoes and transfer them to a large bowl.
- Preheat your oven to 400°F (200°C).
- In the bowl, drizzle the olive oil over the potatoes and add za’atar, salt, lemon zest, and parsley. Toss gently to mix everything together.
- Spread the tossed potatoes onto a large baking sheet, then smash each potato flat with the bottom of a glass.
- Bake in the preheated oven for 20 minutes. After this, flip each potato over and return to bake for an additional 15 minutes.
- While the potatoes are baking, prepare the chipotle tahini by blending tahini, chipotle pepper, adobo sauce, cold water, garlic, and lemon juice until smooth.
- Once the potatoes are done, drizzle the chipotle tahini over them, garnish with fresh parsley, and serve immediately.
Notes
For extra crispiness, consider broiling the potatoes for a few minutes at the end of the baking time.
The chipotle tahini can also be used as a dip for vegetables or spread on sandwiches.
Feel free to adjust the amount of za’atar based on your taste preference.
