- 1 (20 oz) bag 15 bean soup mix
- 2 cups chopped ham
- 1 (14.5 oz) can diced tomatoes
- 1 medium onion (diced)
- 1 cup chopped carrots
- 3 stalks celery (chopped)
- 1 tablespoon minced garlic
- 1 tablespoon Worcestershire sauce
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- 1 teaspoon chicken bouillon
- 6 cups no-sodium chicken broth
- 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
- Salt and pepper (to taste)
Instructions
- Rinse, sort, and soak the 15 bean soup mix overnight or for at least six hours.
- In a 7-quart crockpot, combine soaked beans, ham, diced tomatoes, vegetables, and spices. Stir well.
- Cover and set the slow cooker to low for 6-8 hours or high for 4-6 hours.
- Once cooked, stir in fresh parsley and adjust seasoning with salt and pepper if needed.
- Serve hot, ideally with bread or crackers.
Notes
Make sure to soak the beans to ensure they cook evenly and become tender.
For a vegetarian option, omit the ham and use vegetable broth with added spices for flavor.
Adjust the thickness of the soup by adding more broth if necessary.
