This Crockpot 15 Bean Soup features a blend of tender beans, savory ham, and vibrant vegetables, delivering heartwarming flavor and easy preparation for any gathering.


Ingredients

  • 1 (20 oz) bag 15 bean soup mix
  • 2 cups chopped ham
  • 1 (14.5 oz) can diced tomatoes
  • 1 medium onion (diced)
  • 1 cup chopped carrots
  • 3 stalks celery (chopped)
  • 1 tablespoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chicken bouillon
  • 6 cups no-sodium chicken broth
  • 1/4 cup chopped fresh parsley (or 2 tablespoons dried parsley)
  • Salt and pepper (to taste)

Instructions

  • Rinse, sort, and soak the 15 bean soup mix overnight or for at least six hours.
  • In a 7-quart crockpot, combine soaked beans, ham, diced tomatoes, vegetables, and spices. Stir well.
  • Cover and set the slow cooker to low for 6-8 hours or high for 4-6 hours.
  • Once cooked, stir in fresh parsley and adjust seasoning with salt and pepper if needed.
  • Serve hot, ideally with bread or crackers.

Notes

Make sure to soak the beans to ensure they cook evenly and become tender.
For a vegetarian option, omit the ham and use vegetable broth with added spices for flavor.
Adjust the thickness of the soup by adding more broth if necessary.
