- 1 pound lean ground beef

- 4 cups beef broth
- 3 medium russet potatoes, peeled and diced
- 1 can (10.5 ounces) cheddar cheese soup
- 1 cup heavy whipping cream
- 8 ounces freshly grated cheddar cheese

Instructions
- Cook bacon in a skillet until crispy, leaving grease in the pan.
- Brown the ground beef with onions, garlic, salt, and pepper in the same skillet.
- Transfer the beef mixture to a crockpot; add beef broth, potatoes, and cheese soup.
- Stir well, cover, and cook on low for 6–8 hours or high for 4 hours.
- Last 30 minutes, stir in cream and cheddar cheese, then serve.
Notes
You can substitute turkey bacon for a lighter option.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
For a thicker soup, mash some of the potatoes before adding cream.
