Description

This Crockpot Cheeseburger Soup is comfort food at its best, combining creamy textures and savory ingredients for a delightful, easy-to-make meal that everyone will love!


Ingredients

  • 4 bacon strips
  • 1 pound lean ground beef
  • 1 yellow onion, diced
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 4 cups beef broth
  • 3 medium russet potatoes, peeled and diced
  • 1 can (10.5 ounces) cheddar cheese soup
  • 1 cup heavy whipping cream
  • 8 ounces freshly grated cheddar cheese
  • Pickle slices (optional)
  • Diced tomatoes (optional)

Instructions

  • Cook bacon in a skillet until crispy, leaving grease in the pan.
  • Brown the ground beef with onions, garlic, salt, and pepper in the same skillet.
  • Transfer the beef mixture to a crockpot; add beef broth, potatoes, and cheese soup.
  • Stir well, cover, and cook on low for 6–8 hours or high for 4 hours.
  • Last 30 minutes, stir in cream and cheddar cheese, then serve.

Notes

You can substitute turkey bacon for a lighter option.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
For a thicker soup, mash some of the potatoes before adding cream.
