Description

Crockpot Jambalaya is a comforting and flavorful dish loaded with chicken, sausage, and shrimp. This easy recipe is perfect for busy evenings or family gatherings, offering vibrant flavors and heartwarming aromas.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 lb andouille sausage
  • 3 sticks celery
  • 1 large green bell pepper
  • 1 large red bell pepper
  • 1 large yellow bell pepper
  • 1 large onion
  • 3 garlic cloves
  • 23 tablespoons Creole/Cajun seasoning
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ½ teaspoon cayenne pepper
  • Salt and pepper
  • 28 oz can crushed tomatoes
  • 1 cup chicken broth
  • 12 oz frozen cooked shrimp
  • 3 cups long-grain rice
  • Fresh chopped parsley

Instructions

  • Add cubed chicken, sliced sausage, chopped celery, bell peppers, onion, and garlic to the crockpot.
  • Sprinkle Creole seasoning, oregano, thyme, cayenne, salt, and pepper. Stir gently to combine.
  • Pour crushed tomatoes and chicken broth over the mixture.
  • Cover and cook on low for 6-8 hours or high for 4-6 hours.
  • In the last 30 minutes, add thawed shrimp to the pot, cover and let heat through.
  • Serve over cooked rice or mix rice into the jambalaya.

Notes

Shrimp should not be overcooked; add them in the last minutes of cooking.
Browning the meat before adding enhances the flavor.
Add fresh herbs before serving for extra brightness.
