- 1.5 lb red skinned potatoes
- 2 ropes andouille sausage
- 3–4 sweet corn on the cob
- 1 onion
- 5 garlic cloves
- 4 cups chicken broth
- 1–2 cups water
- 2 tablespoons Old Bay seasoning
- 2 tablespoons Creole/Cajun seasoning
- 2 lbs raw jumbo shrimp
- 1 lemon
- Chopped parsley
Instructions
- Wash and halve the red skinned potatoes.
- Slice the andouille sausage into 1-inch pieces and cut corn into thirds.
- Place potatoes in the bottom of the crockpot, followed by sausage, corn, onion, and garlic.
- Pour in chicken broth and water until ingredients are submerged; add Old Bay and Creole seasoning, and stir.
- Cover and cook on Low for 5-6 hours or on High for 3-4 hours until the potatoes are fork-tender.
- In the last 30-60 minutes, add the shrimp and cook until they turn pink.
- Squeeze lemon juice over the dish and garnish with chopped parsley before serving.
Notes
For best results, add shrimp later to avoid overcooking.
Cut potatoes uniformly for even cooking. Consider meal prepping for convenience.
