- 1 tablespoon olive oil
- 1 lb lean ground turkey
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 28 oz can diced tomatoes
- 1 cup chicken broth
- 2 tablespoons tomato paste
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- 1/4 teaspoon cayenne pepper
- Salt & pepper to taste
- 1 bay leaf
- 1 can black beans, rinsed and drained
- 1 can dark red kidney beans, rinsed and drained
- 1 can cannellini beans, rinsed and drained
Instructions
- Heat olive oil in a skillet over medium heat; saute ground turkey, onion, and garlic until golden brown.
- Combine turkey mixture with remaining ingredients in slow cooker, mixing well.
- Cover and cook on Low for 6 to 8 hours or High for 3 to 4 hours.
- Add beans during the last hour of cooking and stir well.
- Serve hot, topped with cheese, sour cream, or jalapeños.
Notes
Store leftovers in an airtight container for 3 to 5 days in the fridge.
This chili can be frozen for up to 3 months; reheat on the stove or in the microwave.
