Description

Ingredients

  • 1 tablespoon olive oil
  • 1 lb lean ground turkey
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 28 oz can diced tomatoes
  • 1 cup chicken broth
  • 2 tablespoons tomato paste
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1/4 teaspoon cayenne pepper
  • Salt & pepper to taste
  • 1 bay leaf
  • 1 can black beans, rinsed and drained
  • 1 can dark red kidney beans, rinsed and drained
  • 1 can cannellini beans, rinsed and drained

Instructions

  • Heat olive oil in a skillet over medium heat; saute ground turkey, onion, and garlic until golden brown.
  • Combine turkey mixture with remaining ingredients in slow cooker, mixing well.
  • Cover and cook on Low for 6 to 8 hours or High for 3 to 4 hours.
  • Add beans during the last hour of cooking and stir well.
  • Serve hot, topped with cheese, sour cream, or jalapeños.

Notes

Store leftovers in an airtight container for 3 to 5 days in the fridge.
This chili can be frozen for up to 3 months; reheat on the stove or in the microwave.
Adjust spices to your heat preference.
