- 8 oz quality chocolate semi-sweet or dark chocolate
- 4 tbsp unsalted butter can substitute with vegan butter
- 1 cup heavy cream coconut cream for dairy-free option
- 1 tbsp gelatin consider agar-agar for vegetarian option
- 1 cup granulated sugar coconut sugar for less refined sweetness
- 1 tsp sea salt fleur de sel for gourmet finish
- 1 cup fresh berries for vibrant presentation
- 1/4 cup chocolate shavings for elegant finish
Instructions
- Melt the chocolate and unsalted butter together in a double boiler, stirring gently until smooth. Set aside to cool slightly.
- Whip the heavy cream in a large mixing bowl until soft peaks form. Gently fold this into the cooled chocolate mixture.
- In a medium saucepan, cook the granulated sugar over medium heat until it turns golden amber. Stir in the butter and heavy cream until smooth, then add the sea salt.
- Spoon the mousse into dome molds, making an indentation in each. Fill with the salted caramel and then cover with more mousse. Chill for a minimum of 4 hours.
- To serve, gently press on the sides to unmold the chilled mousse domes and serve with your choice of topping.
- Optional: Garnish with fresh berries or chocolate shavings before serving.

For a dairy-free option, use coconut cream and vegan butter.
