This Easy Chicken Ramen combines tender chicken, a rich soy-garlic broth, and silky noodles, creating a comforting bowl of flavor perfect for a quick dinner.

- 2 skinless chicken breasts
- 1/3 cup soy sauce
- 1/4 cup mirin
- 1/4 cup brown sugar
- 1 tbsp minced garlic
- 1 tsp ground ginger
- 6 cups chicken broth
- 1/4 cup soy sauce (for broth)
- 2 tbsp mirin (for broth)
- 2 packs of your favorite ramen noodles
- 2 egg yolks
- 2 tbsp mayonnaise
- 2 tsp minced garlic (for serving)
- 2 boiled eggs
- Scallions
- Bok choy
Instructions
- Combine the marinade ingredients in a bowl and marinate the chicken for at least 10 minutes.
- Cook the marinated chicken in a skillet over medium heat for 10 minutes, flipping halfway through.
- Boil eggs to desired doneness and blanch bok choy in the same pot for a few minutes before draining.
- Simmer the chicken broth with soy sauce and mirin in a large pot, then add ramen noodles for about 5 minutes.
- Create a base in serving bowls with egg yolks and mayonnaise, mix well.
- Assemble the ramen by adding broth and noodles to the base, then top with chicken, bok choy, scallions, and boiled eggs.
Notes
Store any leftovers in an airtight container in the fridge for up to 3 days.
Noodles can become mushy in broth; store components separately if possible.
Reheat gently on the stove with a splash of broth or water.
