Instructions
- Boil a large pot of salted water and cook the gnocchi according to package instructions until they float.
- In a large frying pan, heat olive oil over medium-high. Add drained gnocchi in a single layer and cook undisturbed for 2-3 minutes until golden brown.
- Gently stir the gnocchi to crisp the other sides, cooking for another 2-3 minutes.
- Reduce heat to medium and add minced garlic; sauté for about 1 minute until fragrant.
- Stir in fresh spinach and wilt for 2-3 minutes.
