  • 2.1 pounds boneless skinless chicken breasts
  • 3 fresh peaches
  • 2 jalapeños
  • 1 1/4 teaspoons garlic powder
  • 1 1/4 teaspoons fine sea salt
  • 1 1/4 teaspoons paprika
  • 1 1/4 teaspoons chicken bouillon granules
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon black pepper
  • 1 1/3 cups peach preserves
  • 1 1/4 tablespoons apple cider vinegar
  • 1 1/4 teaspoons soy sauce
  • 3/4 teaspoon minced garlic

Instructions

  • Preheat the oven to 420°F and prepare a baking dish.
  • Cut the chicken into bite-sized pieces and spread them across the baking dish.
  • Mix paprika, garlic powder, bouillon granules, salt, oregano, and black pepper, then sprinkle over the chicken.
  • Whisk together peach preserves, minced garlic, vinegar, and soy sauce in a bowl and pour over the chicken.
  • Arrange peach wedges and jalapeño slices over the chicken.
  • Bake for 15–20 minutes until the chicken is cooked through and the glaze is caramelized.
  • Let it rest for a few minutes before serving.

Notes

For milder heat, remove seeds from jalapeños; for more heat, leave some seeds intact.
