Description

Enjoy these Easy Rotisserie Chicken Tostadas packed with flavor and crispy goodness. Perfect for quick dinner nights or gatherings, each bite is a delightful combination of textures and tastes.


Ingredients

  • 10 small corn tortillas
  • 2 Tbsp avocado oil
  • 2 cups shredded rotisserie chicken
  • 15 oz canned black beans
  • 1 cup canned corn
  • 1 cup chunky salsa
  • 1 Tbsp taco seasoning
  • 1 ½ cups shredded cheese
  • ½ cup diced tomatoes
  • Optional toppings: shredded lettuce, sour cream, avocado, extra salsa, lime juice, fresh cilantro

Instructions

  • Preheat the oven to 450°F and line a baking sheet with parchment paper.
  • Brush both sides of the tortillas with avocado oil and bake for 8-10 minutes until crispy.
  • In a skillet, heat the chicken, drained black beans, corn, salsa, and taco seasoning for 4-5 minutes.
  • Assemble by spooning the chicken mixture onto each tortilla and top with cheese.
  • Return to the oven for 2-3 minutes until cheese is melted and bubbly.
  • Top with diced tomatoes and other optional toppings before serving.
