- 10 small corn tortillas
- 2 Tbsp avocado oil
- 2 cups shredded rotisserie chicken
- 15 oz canned black beans
- 1 cup canned corn
- 1 cup chunky salsa
- 1 Tbsp taco seasoning
- 1 ½ cups shredded cheese
- ½ cup diced tomatoes
- Optional toppings: shredded lettuce, sour cream, avocado, extra salsa, lime juice, fresh cilantro
Instructions
- Preheat the oven to 450°F and line a baking sheet with parchment paper.
- Brush both sides of the tortillas with avocado oil and bake for 8-10 minutes until crispy.
- In a skillet, heat the chicken, drained black beans, corn, salsa, and taco seasoning for 4-5 minutes.
- Assemble by spooning the chicken mixture onto each tortilla and top with cheese.
- Return to the oven for 2-3 minutes until cheese is melted and bubbly.
- Top with diced tomatoes and other optional toppings before serving.
