  • 4 to 6 boneless or bone-in pork chops (about 1 inch thick)
  • 2 large apples, cored and sliced (granny smith or honeycrisp work well)
  • 1 medium onion, sliced
  • 1 cup apple juice or apple cider
  • 2 tablespoons brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon cornstarch (optional, for thickening)
  • 1 tablespoon water (optional, for thickening)

Instructions

  • Season the pork chops on both sides with salt and pepper.
  • Spread the sliced apples and onions evenly on the bottom of the slow cooker.
  • Arrange the pork chops on top of the apple and onion layer.
  • In a small bowl, mix the apple juice, brown sugar, and cinnamon, then pour the mixture over the pork chops.
  • Cover and cook on low for 6 hours or high for 3 hours, until the pork is tender and cooked through.
  • Optional: For a thicker sauce, move the pork chops to a plate. Mix the cornstarch and water, then stir it into the cooking liquid. Cover and cook on high for about 5 minutes, or until thickened.
  • Serve the pork chops with apples and onions spooned over the top, using the sauce as desired.
