- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

- Pre-heat the oven to 450 degrees.
- In a large skillet over medium heat, melt 2 tablespoons of butter.
- Add the chopped onions and cook for 3-4 minutes, stirring occasionally, until they become translucent.
- Transfer the onions to a large mixing bowl and allow to cool for 2-3 minutes.
- In the bowl, mix in crumbled blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.

- In the same skillet, add the remaining 2 tablespoons of unsalted butter and heat over high.
- Season each filet mignon steak with kosher salt and coarse ground black pepper on all sides.
- Sear the steaks in the skillet for 3 minutes on each side until they are browned.
- Top each steak with the blue cheese mixture and transfer to the oven for cooking (4 minutes for rare, 5-6 minutes for medium, or longer for well done).
- After removing from the oven, let the steaks rest for 10 minutes under a sheet of foil before serving.
