  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Pre-heat the oven to 450 degrees.
  • In a large skillet over medium heat, melt 2 tablespoons of butter.
  • Add the chopped onions and cook for 3-4 minutes, stirring occasionally, until they become translucent.
  • Transfer the onions to a large mixing bowl and allow to cool for 2-3 minutes.
  • In the bowl, mix in crumbled blue cheese, panko breadcrumbs, kosher salt, and coarse ground black pepper.
  • Using a fork, gently mash the mixture together until combined.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter and heat over high.
  • Season each filet mignon steak with kosher salt and coarse ground black pepper on all sides.
  • Sear the steaks in the skillet for 3 minutes on each side until they are browned.
  • Top each steak with the blue cheese mixture and transfer to the oven for cooking (4 minutes for rare, 5-6 minutes for medium, or longer for well done).
  • After removing from the oven, let the steaks rest for 10 minutes under a sheet of foil before serving.
