Description

Satisfy your cravings with these Ground Turkey Egg Roll Bowls, featuring lean turkey and crisp vegetables in a savory sauce. Perfect for a quick dinner, these bowls are a delightful blend of flavors that will have everyone asking for seconds!


Ingredients

  • 1 tbsp olive oil
  • 3 green onions, chopped, separated whites from greens
  • 1 lb ground turkey
  • 16 oz cole slaw mix
  • 1 cup shredded carrots
  • 34 garlic cloves, minced
  • 1 inch ginger grated
  • ¼ c plus tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 12 tbsp sweet chili sauce
  • 1 tbsp toasted sesame oil
  • â…“ cup chopped cilantro
  • ½ tsp pepper
  • ½ tsp salt, more or less to taste

Instructions

  • Heat olive oil in a large sauté pan over medium-high heat.
  • Add the chopped white parts of green onions and sauté for 1-2 minutes.
  • Add ground turkey and break it into smaller chunks. Cook until browned and no longer pink.
  • In the last minute, stir in minced garlic and grated ginger.
  • Add cole slaw, shredded carrots, and soy sauce, mixing well. Cook for about 4-6 minutes until veggies are tender.
  • Reduce heat to low, then add sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro. Toss to combine.
  • Season with salt and pepper. Add more soy sauce for moisture if needed.
  • Serve with additional cilantro and sesame seeds on top.

Notes

Feel free to adjust the spice level by modifying the amount of sriracha.
For a vegetarian option, substitute the ground turkey with tofu or tempeh.
These bowls are great for meal prep and can be stored in the fridge for a few days.
