- 1 tbsp olive oil
- 3 green onions, chopped, separated whites from greens
- 1 lb ground turkey
- 16 oz cole slaw mix
- 1 cup shredded carrots
- 3–4 garlic cloves, minced
- 1 inch ginger grated
- ¼ c plus tbsp low-sodium soy sauce
- 2 tsp sriracha
- 1–2 tbsp sweet chili sauce
- 1 tbsp toasted sesame oil
- â…“ cup chopped cilantro
- ½ tsp pepper
- ½ tsp salt, more or less to taste
Instructions
- Heat olive oil in a large sauté pan over medium-high heat.
- Add the chopped white parts of green onions and sauté for 1-2 minutes.
- Add ground turkey and break it into smaller chunks. Cook until browned and no longer pink.
- In the last minute, stir in minced garlic and grated ginger.
- Add cole slaw, shredded carrots, and soy sauce, mixing well. Cook for about 4-6 minutes until veggies are tender.
- Reduce heat to low, then add sriracha, sweet chili sauce, sesame oil, green onion greens, and cilantro. Toss to combine.
- Season with salt and pepper. Add more soy sauce for moisture if needed.
- Serve with additional cilantro and sesame seeds on top.
Notes
Feel free to adjust the spice level by modifying the amount of sriracha.
For a vegetarian option, substitute the ground turkey with tofu or tempeh.
These bowls are great for meal prep and can be stored in the fridge for a few days.
