Description

This Healthy Cheesy Ground Beef Rice Casserole is a comforting dish filled with flavor. It’s easy to prepare and perfect for weeknight dinners or family gatherings with its creamy sauce and gooey cheese.


Ingredients

  • 1 lb lean ground beef
  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 2 cups cooked white rice
  • 10.5 oz cream of mushroom soup
  • 1/2 cup milk or beef broth
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon paprika
  • Salt and pepper (to taste)
  • Chopped parsley (optional, for garnish)

Instructions

  • Preheat oven to 350°F (175°C); grease a 9×13-inch baking dish.
  • In a skillet, brown the ground beef and onion for 7-8 minutes; drain excess fat.
  • Add garlic and cook until fragrant (about 30 seconds).
  • Whisk cream of mushroom soup, milk or broth, paprika, salt, and pepper together.
  • In the baking dish, mix cooked rice, beef mixture, 1 cup cheese, and the sauce.
  • Top with remaining cheese.
  • Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until cheese is golden.
  • (Optional) Broil for 2 minutes for extra crispiness.
  • Let rest for 5 minutes; garnish with parsley if desired.

Notes

For a healthier version, substitute whole grain or cauliflower rice.
Store leftovers in an airtight container for up to 4 days in the fridge.
Can be assembled ahead of time and stored in the fridge before baking.
