- 1 lb lean ground beef
- 1 small onion (diced)
- 2 cloves garlic (minced)
- 2 cups cooked white rice
- 10.5 oz cream of mushroom soup
- 1/2 cup milk or beef broth
- 2 cups shredded cheddar cheese (divided)
- 1 teaspoon paprika
- Salt and pepper (to taste)
- Chopped parsley (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C); grease a 9×13-inch baking dish.
- In a skillet, brown the ground beef and onion for 7-8 minutes; drain excess fat.
- Add garlic and cook until fragrant (about 30 seconds).
- Whisk cream of mushroom soup, milk or broth, paprika, salt, and pepper together.
- In the baking dish, mix cooked rice, beef mixture, 1 cup cheese, and the sauce.
- Top with remaining cheese.
- Cover with foil and bake for 20 minutes; remove foil and bake for an additional 10 minutes until cheese is golden.
- (Optional) Broil for 2 minutes for extra crispiness.
- Let rest for 5 minutes; garnish with parsley if desired.
Notes
For a healthier version, substitute whole grain or cauliflower rice.
Store leftovers in an airtight container for up to 4 days in the fridge.
Can be assembled ahead of time and stored in the fridge before baking.
