Ingredients
- Italian Sausage (11 ounces)
- Chopped Onion (1/2 medium)
- Minced Garlic (3 cloves)
- Dry White Wine (1/2 cup)
- Heavy/Whipping Cream (1 cup)
- Pesto (3 tablespoons)
- Uncooked Potato Gnocchi (1 pound)
- Fresh Baby Spinach (2 cups packed)
- Shredded Mozzarella Cheese (1.5 cups)
- Freshly Grated Parmesan Cheese (optional)
- Chopped Fresh Parsley
- Salt & Pepper
Instructions
- Preheat oven to 375°F, ensuring the rack is positioned in the top third.
- In a deep oven-safe skillet, crumble and cook the sausage over medium-high heat until browned, about 5 minutes.
- Add chopped onions and cook until soft, around another 5 minutes. Drain excess fat.
- Stir in minced garlic and dry white wine; cook for 30 seconds to release flavors. Add cream and pesto, mixing until smooth.
- Fold in the gnocchi, heating for 1-2 minutes without thickening the sauce.
- Stir in fresh spinach until wilted. Top evenly with shredded mozzarella.
- Transfer skillet to the oven and bake uncovered for 15 minutes until cheese is bubbly and golden. Broil for a minute for extra color if desired.
- Let sit for 5 minutes before serving. Garnish with parsley and parmesan if desired.
