Description

Ingredients

  • Italian Sausage (11 ounces)
  • Chopped Onion (1/2 medium)
  • Minced Garlic (3 cloves)
  • Dry White Wine (1/2 cup)
  • Heavy/Whipping Cream (1 cup)
  • Pesto (3 tablespoons)
  • Uncooked Potato Gnocchi (1 pound)
  • Fresh Baby Spinach (2 cups packed)
  • Shredded Mozzarella Cheese (1.5 cups)
  • Freshly Grated Parmesan Cheese (optional)
  • Chopped Fresh Parsley
  • Salt & Pepper

Instructions

  • Preheat oven to 375°F, ensuring the rack is positioned in the top third.
  • In a deep oven-safe skillet, crumble and cook the sausage over medium-high heat until browned, about 5 minutes.
  • Add chopped onions and cook until soft, around another 5 minutes. Drain excess fat.
  • Stir in minced garlic and dry white wine; cook for 30 seconds to release flavors. Add cream and pesto, mixing until smooth.
  • Fold in the gnocchi, heating for 1-2 minutes without thickening the sauce.
  • Stir in fresh spinach until wilted. Top evenly with shredded mozzarella.
  • Transfer skillet to the oven and bake uncovered for 15 minutes until cheese is bubbly and golden. Broil for a minute for extra color if desired.
  • Let sit for 5 minutes before serving. Garnish with parsley and parmesan if desired.

Notes

Allow the dish to cool before storing leftovers in an airtight container for up to 3 days in the refrigerator.
Feel free to adjust the cream or wine to maintain sauce consistency if it thickens too much.
