Ingredients

  • 3 Vine Ripe Tomatoes
  • 1/2 Small Onion
  • 2 tbsp Fresh Basil, Chopped
  • 1 Clove Garlic, Minced
  • 1/2 tsp Dried Oregano
  • 1/4 tsp Black Pepper
  • 1/4 tsp Fine Sea Salt
  • 1 French Baguette, Sliced
  • 3 tbsp Extra Virgin Olive Oil
  • Crumbled Feta
  • Balsamic Vinegar Glaze

Instructions

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Dice tomatoes and onions, removing seeds. Place in a medium bowl.
  • Add basil, garlic, oregano, pepper, and salt to the bowl and mix well. Let sit for 10 minutes.
  • Slice baguette diagonally into 1-inch pieces and drizzle with olive oil.
  • Arrange slices on the baking sheet and bake for 8 minutes, flipping halfway.
  • Top toasted slices with drained tomato mixture, adding balsamic glaze and feta if desired.

Notes

Remove excess liquid from tomatoes for best texture.
