Description

This Irish Soda Bread is full of flavor and straightforward to prepare. With buttermilk and optional raisins, it provides a delightful taste for your gatherings and meals. Perfect for a quick dinner or a comforting snack, this bread is a must-try!


Ingredients

  • 1 ¾ cups raisins, or currants, optional
  • ⅔ cup irish whiskey such as jameson, or apple juice or white grape juice, optional
  • 4 ¼ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ¾ teaspoon baking soda
  • 1 teaspoon salt
  • 1 ¾ cups buttermilk
  • 2 large eggs + 2 yolks
  • 4 tablespoons unsalted butter, melted; divided
  • ¼ cup granulated sugar
  • 2 tablespoons turbinado sugar, optional

Instructions

  • Preheat the oven to 350°F and prepare a nonstick baking sheet with cooking spray, or preheat a greased cast iron skillet.
  • If using raisins, soak them in the chosen liquid while preparing the dough.
  • In a large bowl, mix together the flour, baking powder, baking soda, and salt.
  • In another bowl, whisk the buttermilk, eggs and yolks, 3 tablespoons of melted butter, and granulated sugar.
  • Combine the wet ingredients with the dry ingredients, mixing gently without overworking the dough.
  • If using raisins, drain them and fold them into the dough.
  • Transfer the dough to the baking sheet (or skillet) and shape it into a round loaf.
  • Score a large X about ½ inch deep on the top of the dough.
  • Brush the remaining melted butter over the dough and, if desired, sprinkle with turbinado sugar.
  • Bake for 45 to 60 minutes until golden brown and cooked through, rotating midway for even baking. Check for doneness before removing.
  • Let the bread cool before slicing and serving.

Notes

For a richer flavor, consider soaking the raisins in whiskey or juice for an hour before use.
Ensure even baking by rotating the baking sheet or skillet while cooking.
Store bread airtight at room temperature for up to 4 days or freeze for up to 3 months.
