- 1/2 cup Pistachio Paste
- 1/2 cup Eagle Brand Sweetened Condensed Milk
- 4 large Egg Yolks
- 1/4 cup Cornstarch
- 3 tablespoons Unsalted Butter
- 1/4 cup Powdered Sugar
- 1/4 cup Cake Flour
- 1 cup All-Purpose Flour
- 1 cup Whipping Cream
- 1/2 cup White Chocolate Chips
- Strawberries and Gold Leaves
Instructions
- Heat milk and pistachio paste until simmering, let infuse for 10 minutes
- Whisk together egg yolks, sweetened condensed milk, and cornstarch
- Gradually add warm milk mix to egg mix, whisking constantly
- Thicken mixture over medium heat for 5-7 minutes
- Stir in butter until melted; chill the cream
- Make craquelin, roll out, cut circles, freeze them
- Prepare choux pastry with water, butter, and flour mixture
- Dry dough slightly on low heat, mix in eggs one at a time
- Pipe mounds onto baking sheet, place frozen craquelin on top
- Bake at 375°F for 25-30 minutes until golden
- Fill with pistachio cream, decorate with whipped cream or chocolate.
Notes
Use room temperature eggs for better incorporation in the dough.
Make the pastry cream a day ahead for deeper flavors.
Store in an airtight container for up to 2 days at room temperature.
