Ingredients

  • 1 1/4 cups Milk
  • 1/2 cup Pistachio Paste
  • 1/2 cup Eagle Brand Sweetened Condensed Milk
  • 4 large Egg Yolks
  • 1/4 cup Cornstarch
  • 3 tablespoons Unsalted Butter
  • 1/4 cup Powdered Sugar
  • 1/4 cup Cake Flour
  • 1 cup All-Purpose Flour
  • 1 cup Whipping Cream
  • 1/2 cup White Chocolate Chips
  • Strawberries and Gold Leaves

Instructions

  • Heat milk and pistachio paste until simmering, let infuse for 10 minutes
  • Whisk together egg yolks, sweetened condensed milk, and cornstarch
  • Gradually add warm milk mix to egg mix, whisking constantly
  • Thicken mixture over medium heat for 5-7 minutes
  • Stir in butter until melted; chill the cream
  • Make craquelin, roll out, cut circles, freeze them
  • Prepare choux pastry with water, butter, and flour mixture
  • Dry dough slightly on low heat, mix in eggs one at a time
  • Pipe mounds onto baking sheet, place frozen craquelin on top
  • Bake at 375°F for 25-30 minutes until golden
  • Fill with pistachio cream, decorate with whipped cream or chocolate.

Notes

Use room temperature eggs for better incorporation in the dough.
Make the pastry cream a day ahead for deeper flavors.
Store in an airtight container for up to 2 days at room temperature.
