Description

This Leftover Turkey Noodle Soup is a delightful, easy meal that transforms leftover turkey into a rich and comforting dish, perfect for any night of the week.


Ingredients

  • Avocado or Olive Oil
  • Leftover Turkey Carcass
  • Yellow Onion
  • Carrots
  • Celery Ribs
  • Garlic
  • Fresh Thyme
  • Sage Leaves
  • Dried Bay Leaves
  • Whole Peppercorns
  • Kosher Salt
  • Water
  • Egg Noodles
  • Garlic Powder
  • Crushed Red Pepper Flakes
  • Black Pepper

Instructions

  • Preheat and prepare the turkey carcass and vegetables.
  • Make the stock by sautéing onion, carrots, celery, then adding turkey carcass and water.
  • Bring to a simmer and strain the stock after 2-3 hours.
  • Sauté fresh veggies and turkey meat in a soup pot.
  • Combine with stock, add seasonings, and bring to a gentle boil.
