Description

Ingredients

  • 1 cup diced yellow onion
  • 2 lbs chicken breasts
  • 1½ tsp Italian seasoning
  • 1 tsp garlic powder
  • 1 tsp paprika
  • ½ tsp ground black pepper
  • ½ lb cauliflower florets
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 2 lemons
  • 3 cups fresh baby spinach

Instructions

  • Heat olive oil in a large skillet; sauté diced onion for 1-2 minutes.
  • Add chicken breasts with seasonings and cook until browned for 5-7 minutes.
  • Incorporate cauliflower, rice, lemon zest, and juice; stir with a splash of broth.
  • Pour in remaining chicken broth, bring to boil, then simmer for 10 minutes after covering.
  • Fold in fresh baby spinach, cover, and let sit for 10 minutes to wilt spinach.
  • Fluff the rice and serve warm.

Notes

Store leftovers in an airtight container for up to 3 days.
To reheat, microwave for 2-3 minutes or warm on the stove.
Use leftover cooked chicken for a quicker prep.
