- 1 cup diced yellow onion
- 2 lbs chicken breasts
- 1½ tsp Italian seasoning
- 1 tsp garlic powder
- 1 tsp paprika
- ½ tsp ground black pepper
- ½ lb cauliflower florets
- 1 cup uncooked long-grain white rice
- 2 cups chicken broth
- 2 lemons
- 3 cups fresh baby spinach
Instructions
- Heat olive oil in a large skillet; sauté diced onion for 1-2 minutes.
- Add chicken breasts with seasonings and cook until browned for 5-7 minutes.
- Incorporate cauliflower, rice, lemon zest, and juice; stir with a splash of broth.
- Pour in remaining chicken broth, bring to boil, then simmer for 10 minutes after covering.
- Fold in fresh baby spinach, cover, and let sit for 10 minutes to wilt spinach.
- Fluff the rice and serve warm.
