Ingredients
- Almonds or Pistachios (2/3 cup)
- Brown Sugar (1/3 cup)
- All-Purpose Flour (2 ½ cups)
- Baking Powder (½ teaspoon)
- Ground Cinnamon (1 teaspoon)
- Salt (½ teaspoon)
- Unsalted Butter (1 cup)
- Granulated Sugar (1/3 cup)
- Large Egg (1)
- Pure Vanilla Extract (1½ teaspoons)
- Jam or Preserves (½ cup)
- Confectioners’ Sugar (2 tablespoons)
Instructions
- Place finely ground almonds or pistachios with brown sugar in a food processor and pulse until fine.
- Whisk together flour, baking powder, cinnamon, and salt in a bowl.
- Beat softened butter and granulated sugar in a large bowl until creamy, then mix in egg and vanilla.
- Add dry ingredients and nut mixture to wet ingredients, mixing until a dough forms.
- Chill the dough in discs for at least 3 hours or up to 4 days.
- Preheat oven to 350°F (180°C) and prepare baking sheets.
- Roll out the dough to about ¼ inch thick and cut into circles.
- Cut a hole in the center of half the cookies for the jam to show.
- Bake for about 10-11 minutes until lightly browned.
- Assemble cookies with jam between two pieces, dust with confectioners’ sugar.

Substitute almond flour for a gluten-free version.
