- 2 cups all-purpose flour
- ½ teaspoon salt
- ½ teaspoon instant yeast or active dry yeast
- ½ cup + 1 tablespoon lukewarm water (135 ml)
- ½ tablespoon extra virgin olive oil
- ½ or 1 tablespoon flour or semolina flour
- ½ cup pizza sauce
- 5 oz fresh mozzarella (or ½ cup shredded mozzarella)
- 1 teaspoon dried oregano
- 3 tablespoons fresh basil, coarsely chopped
Instructions
- In a large bowl, mix flour, salt, and yeast together.
- Slowly add lukewarm water and olive oil, stirring to form a shaggy dough.
- Transfer to a floured surface and knead gently for about 1 minute.
- Place dough in a greased bowl, cover, and let rise for 30 minutes until doubled.
- Preheat oven to 450°F (230°C).
- Roll out the dough to 1/8 inch thickness and cut into 2.7-inch circles.
- Place dough circles on a baking sheet, top with pizza sauce, mozzarella, and herbs.
- Bake for 8-10 minutes until golden and cheese is bubbling.
- Let cool for a minute, drizzle with olive oil, garnish, and serve hot.
Notes
Mini pizzas can be frozen for up to three months; reheat in a preheated oven.
Adjust toppings to cater to dietary preferences, such as gluten-free or vegan options.
