Description

These mini pizzas are a delightful treat featuring a crispy crust, gooey cheese, and fresh toppings. Ideal for parties, quick meals, or family fun!


Ingredients

Scale
  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ½ teaspoon instant yeast or active dry yeast
  • ½ cup + 1 tablespoon lukewarm water (135 ml)
  • ½ tablespoon extra virgin olive oil
  • ½ or 1 tablespoon flour or semolina flour
  • ½ cup pizza sauce
  • 5 oz fresh mozzarella (or ½ cup shredded mozzarella)
  • 1 teaspoon dried oregano
  • 3 tablespoons fresh basil, coarsely chopped

Instructions

  • In a large bowl, mix flour, salt, and yeast together.
  • Slowly add lukewarm water and olive oil, stirring to form a shaggy dough.
  • Transfer to a floured surface and knead gently for about 1 minute.
  • Place dough in a greased bowl, cover, and let rise for 30 minutes until doubled.
  • Preheat oven to 450°F (230°C).
  • Roll out the dough to 1/8 inch thickness and cut into 2.7-inch circles.
  • Place dough circles on a baking sheet, top with pizza sauce, mozzarella, and herbs.
  • Bake for 8-10 minutes until golden and cheese is bubbling.
  • Let cool for a minute, drizzle with olive oil, garnish, and serve hot.

Notes

Mini pizzas can be frozen for up to three months; reheat in a preheated oven.
Adjust toppings to cater to dietary preferences, such as gluten-free or vegan options.
Fresh herbs enhance flavor significantly, so use them generously.
