These No-Bake Chocolate Cherry Bourbon Balls are a delightful treat combining rich chocolate with tart cherries and smooth bourbon. Easy and perfect for any gathering!

- 1 cup pitted sour cherries
- ½ cup bourbon
- 1 tablespoon brown sugar
- 8 oz semi-sweet chocolate
- â…“ cup heavy cream
- 1 tablespoon unsalted butter, room temperature
- ½ cup bourbon-soaked cherries, finely chopped and well-drained
- 12 oz dark chocolate or chocolate melting wafers
- Optional Garnish: Crushed freeze-dried cherries or flaky sea salt
Instructions
- Soak the sour cherries with bourbon and brown sugar in the fridge for at least 2 hours.
- Make the ganache by heating heavy cream and melting it into chopped semi-sweet chocolate, adding butter once smooth.
- Fold in the chopped cherries and chill the mixture until firm enough to scoop.
- Scoop the chilled ganache into small mounds and chill again for sturdiness.
- Roll each chilled scoop into smooth balls and refrigerate until firm.
- Melt dark chocolate and dip the truffles in it, allowing excess to drip off.
- Garnish with freeze-dried cherries or sea salt while the chocolate is still wet, then let set.
Notes
Ensure cherries are well-drained to prevent a soggy mix.
For a quicker chill, place the ganache in the freezer, but do not let it freeze solid.
Add coconut oil to thin the chocolate coating if it’s too thick.
