- 2 tbsp olive oil
- 1 cup onion (diced)
- 4 garlic cloves (minced)
- 1 tsp Italian seasoning
- ½ tsp salt
- ¼ cup all-purpose flour
- 32 oz. chicken broth
- ½ cup heavy cream
- 2 lb. gnocchi
- 1 bunch kale (chopped and stems removed)
- 1 cup parmesan cheese (freshly grated)
- Red pepper flakes to taste
Instructions
- Cook the sausage in a skillet until browned and cooked through, then remove and set aside.
- Sauté diced onion in the same skillet until translucent, adding garlic, Italian seasoning, and salt until fragrant.
- Sprinkle in flour, whisking to create a roux, then slowly add chicken broth and cream, cooking until boiling.
- Add gnocchi, cooking until they float, then stir in chopped kale until wilted and bright green.
- Fold in parmesan cheese and return sausage to the pot, mixing before serving.
Notes
Use freshly grated parmesan for better melting texture.
Feel free to swap out kale for spinach if preferred.
Adjust the thickness of the sauce by adding more broth or cream if needed.
