  • 1 ½ lb ground beef
  • 1 lb potatoes (diced)
  • 1 medium onion (diced)
  • 2 cloves garlic (minced)
  • 2 tsp paprika
  • ¼ tsp dried thyme
  • 1 tsp dried oregano
  • ½ tsp cumin
  • Salt & black pepper (to taste)
  • 2 tbsp butter
  • 1 cup water or beef broth
  • Fresh parsley or green onions (for garnish)

Instructions

  • Preheat and heat a large skillet over medium-high. Add half the butter, then the ground beef, cooking until browned (6-8 mins).
  • Season the beef with salt, pepper, paprika, thyme, oregano, and cumin. Transfer to a bowl and set aside.
  • In the same skillet, sauté the diced onion for about 5 mins until soft, then add minced garlic for 1 more min.
  • Stir in the diced potatoes and let cook for 5-6 mins until slightly golden. Cover to speed cooking.
  • Pour in water or beef broth, scrape the pan, and let simmer covered for 10-12 mins until potatoes are fork-tender.
  • Return beef to the skillet, stir, and heat through for an additional 4 mins. Garnish with parsley or green onions.

Notes

For creamier potatoes, consider using Yukon Gold or russet; they provide rich flavor and texture.
Feel free to swap butter for olive oil for a dairy-free version. You can also use turkey or chicken instead of beef.
