- 2 cloves garlic (minced)
- 2 tsp paprika
- ¼ tsp dried thyme
- 1 tsp dried oregano

Instructions
- Preheat and heat a large skillet over medium-high. Add half the butter, then the ground beef, cooking until browned (6-8 mins).
- Season the beef with salt, pepper, paprika, thyme, oregano, and cumin. Transfer to a bowl and set aside.
- In the same skillet, sauté the diced onion for about 5 mins until soft, then add minced garlic for 1 more min.
- Stir in the diced potatoes and let cook for 5-6 mins until slightly golden. Cover to speed cooking.
- Pour in water or beef broth, scrape the pan, and let simmer covered for 10-12 mins until potatoes are fork-tender.
- Return beef to the skillet, stir, and heat through for an additional 4 mins. Garnish with parsley or green onions.
Notes
For creamier potatoes, consider using Yukon Gold or russet; they provide rich flavor and texture.
Feel free to swap butter for olive oil for a dairy-free version. You can also use turkey or chicken instead of beef.
This dish freezes well for up to three months. Reheat in the microwave or on the stove for best results.
