Description

  • 1 cup breadcrumbs
  • 1 medium onion, grated
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried sage
  • 1 large egg
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 tablespoons olive oil
  • 2 large sweet potatoes, peeled and cubed
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup bourbon
  • 1/4 cup maple syrup
  • 2 tablespoons Dijon mustard
  • 1 cup chicken stock

Instructions

  • Combine pork, breadcrumbs, onion, garlic, paprika, sage, egg, Worcestershire, salt, and pepper in a bowl and form meatballs.
  • Heat olive oil in skillet and brown meatballs for about 6 minutes.
  • Boil sweet potatoes until fork-tender, then drain.
  • In the skillet, add bourbon and scrape up browned bits, then mix in maple syrup, mustard, and chicken stock. Simmer.
  • Add the meatballs to the sauce and cover, cooking until done.
  • Mash sweet potatoes with butter, cream, cinnamon, and nutmeg until smooth.
  • Whisk in cold butter to finish the sauce and serve over meatballs and sweet potatoes.

Notes

Ensure meatballs are not overmixed to keep them tender.
Sweet potatoes should be fork-tender before mashing for the best texture.
Serve the dish with a simple salad or roasted vegetables for a balanced meal.
