Description

Quick Ground Beef and Potatoes is a flavorful one-pan dish that’s perfect for a speedy weeknight dinner. With tender potatoes, juicy beef, and melted cheese, this recipe offers comfort in every bite. It’s an easy, homemade meal that your family will love.


Ingredients

  • 2 tablespoons olive oil
  • 1 ½ pounds lean ground beef
  • 2 teaspoons kosher salt, divided
  • 2 cloves garlic, minced
  • 1 medium yellow onion, finely diced
  • 1 teaspoon smoked paprika
  • ½ teaspoon freshly ground black pepper
  • 1 ½ pounds yukon gold or russet potatoes, chopped into ½ inch cubes
  • 1 cup water
  • 1 teaspoon yellow mustard
  • 1 tablespoon worcestershire sauce
  • 4 tablespoons ketchup
  • 2 cups sharp cheddar cheese, grated

Instructions

  • Preheat the oven to 375°F, or skip this step if desired.
  • In a large non-stick skillet, heat 1 tablespoon of olive oil over medium high heat. Add the diced onion and ground beef. Season with 1 teaspoon of salt, garlic, black pepper, and smoked paprika.
  • Cook the mixture for 5-8 minutes, breaking the meat apart until browned and the onion has softened, stirring occasionally.
  • Remove the beef mixture from the skillet and set aside. In the same pan, add 1 tablespoon of olive oil and the cubed potatoes, along with the remaining teaspoon of salt. Sauté for 1 minute to release the spices' fragrance.
  • Add ¼ cup of water, cover, and cook while stirring frequently until the potatoes are just tender, about 15-20 minutes. If the potatoes begin to stick, add more water as needed, ¼ cup at a time.
  • Once the potatoes are tender, return the cooked meat to the skillet. Stir in the mustard, Worcestershire sauce, and ketchup, adding more water if the mixture seems dry.
  • Mix in half of the cheese, then top with the remaining cheese. Bake for 5 minutes or until the cheese is melted. Serve warm with toppings of your choice.

Notes

Feel free to use any type of cheese in place of cheddar.
For a spicier kick, add diced jalapeños or red pepper flakes to the beef mixture.
