- 2 tablespoons olive oil
- 1 ½ pounds lean ground beef
- 2 teaspoons kosher salt, divided
- 2 cloves garlic, minced
- 1 medium yellow onion, finely diced
- 1 teaspoon smoked paprika
- ½ teaspoon freshly ground black pepper
- 1 ½ pounds yukon gold or russet potatoes, chopped into ½ inch cubes
- 1 cup water
- 1 teaspoon yellow mustard
- 1 tablespoon worcestershire sauce
- 4 tablespoons ketchup
- 2 cups sharp cheddar cheese, grated
Instructions
- Preheat the oven to 375°F, or skip this step if desired.
- In a large non-stick skillet, heat 1 tablespoon of olive oil over medium high heat. Add the diced onion and ground beef. Season with 1 teaspoon of salt, garlic, black pepper, and smoked paprika.
- Cook the mixture for 5-8 minutes, breaking the meat apart until browned and the onion has softened, stirring occasionally.
- Remove the beef mixture from the skillet and set aside. In the same pan, add 1 tablespoon of olive oil and the cubed potatoes, along with the remaining teaspoon of salt. Sauté for 1 minute to release the spices' fragrance.
- Add ¼ cup of water, cover, and cook while stirring frequently until the potatoes are just tender, about 15-20 minutes. If the potatoes begin to stick, add more water as needed, ¼ cup at a time.
- Once the potatoes are tender, return the cooked meat to the skillet. Stir in the mustard, Worcestershire sauce, and ketchup, adding more water if the mixture seems dry.
- Mix in half of the cheese, then top with the remaining cheese. Bake for 5 minutes or until the cheese is melted. Serve warm with toppings of your choice.
Notes
Feel free to use any type of cheese in place of cheddar.
For a spicier kick, add diced jalapeños or red pepper flakes to the beef mixture.
