- 4 large boneless, skinless chicken breasts
- 1 teaspoon garlic powder
- 1 teaspoon chili powder
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 1 onion, chopped
- 1 can Ro-tel diced tomatoes and green chilies
- 1 can black beans, drained
- 1 cup corn
- 1 teaspoon smoked paprika
- 1 cup Mexican cheese blend
- Fresh cilantro, for garnish
Instructions
- Preheat oven to 400°F.
- Cut chicken breasts in half to create thinner cutlets.
- Season chicken with garlic powder, chili powder, salt, and pepper.
- Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken for 3-4 minutes on each side.
- Remove chicken and set aside. Sauté chopped onion until soft, about 5 minutes.
- Stir in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through for 2 minutes.
- Reintroduce chicken, top with the bean mixture and sprinkle with cheese.
- Bake in the oven for 5-7 minutes until chicken reaches 165°F and cheese is melted.
- Garnish with cilantro and serve immediately.
Notes
Leftovers can be stored in the refrigerator for up to 3 days or frozen for 3 months.
Substitute chicken thighs for juicier meat, if desired.
For a vegetarian version, use grilled tofu or hearty veggies instead of chicken.
