Description

This Santa Fe Chicken is a delightful dish featuring juicy chicken, vibrant vegetables, and gooey cheese. Perfect for family dinners or casual gatherings, it’s flavorful and easy to prepare in just 30 minutes.


Ingredients

  • 4 large boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 can Ro-tel diced tomatoes and green chilies
  • 1 can black beans, drained
  • 1 cup corn
  • 1 teaspoon smoked paprika
  • 1 cup Mexican cheese blend
  • Fresh cilantro, for garnish

Instructions

  • Preheat oven to 400°F.
  • Cut chicken breasts in half to create thinner cutlets.
  • Season chicken with garlic powder, chili powder, salt, and pepper.
  • Heat olive oil in an oven-safe skillet over medium-high heat and sear chicken for 3-4 minutes on each side.
  • Remove chicken and set aside. Sauté chopped onion until soft, about 5 minutes.
  • Stir in Ro-tel tomatoes, black beans, corn, and smoked paprika; heat through for 2 minutes.
  • Reintroduce chicken, top with the bean mixture and sprinkle with cheese.
  • Bake in the oven for 5-7 minutes until chicken reaches 165°F and cheese is melted.
  • Garnish with cilantro and serve immediately.

Notes

Leftovers can be stored in the refrigerator for up to 3 days or frozen for 3 months.
Substitute chicken thighs for juicier meat, if desired.
For a vegetarian version, use grilled tofu or hearty veggies instead of chicken.
