- 1 tsp salt
- 1 tsp black pepper (or to taste)
- Grated parmesan (optional)
Instructions
- Preheat the oven to 425°F and line a baking sheet with parchment paper.
- Toss gnocchi, onion, bell peppers, and zucchini onto the prepared sheet pan in an even layer.
- Layer sliced smoked sausages over the veggies and gnocchi.
- Drizzle olive oil over the ingredients and sprinkle with Italian seasoning, salt, and black pepper.
- Toss everything together gently to ensure an even coating and distribute evenly on the sheet.
- Roast in the oven for about 25 minutes, stirring halfway through, until veggies are tender and gnocchi is golden and crispy.
