Ingredients

  • 1 tablespoon salted butter
  • 4 large eggs
  • 2 tablespoons milk or cream
  • Salt & pepper to taste
  • 2 ounces smoked salmon
  • chopped chives for garnish

Instructions

  • Melt the butter in a nonstick pan over medium heat.
  • In a bowl, whisk together eggs and milk (or cream). Season with salt and pepper. Add the eggs to the pan with butter and softly scramble.
  • Cook slowly, stirring occasionally, until soft curds start to form but eggs are not fully cooked.
  • Add the smoked salmon and continue cooking, scrambling the eggs and salmon until just set yet moist and soft.
  • Serve sprinkled with chives, either in the pan or on serving plates.

Notes

For extra creaminess, use cream instead of milk.
