Description

Ingredients

  • 1/2 cup butter melted
  • 1/2 cup sugar
  • 1/2 cups brown sugar
  • 1/2 teaspoon vanilla
  • 1/3 cup molasses
  • 1 egg
  • 2 teaspoons baking soda
  • 2 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ground ginger
  • 1/4 teaspoon allspice
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt

Instructions

  • Preheat the oven to 350°F (175°C).
  • Prepare a 9"×13" baking pan by spraying with non-stick cooking spray and set aside.
  • In a large mixing bowl, cream together melted butter, white sugar, brown sugar, vanilla extract, and molasses until the mixture is creamy, about 1-2 minutes. A stand mixer works best for this thick batter.
  • Incorporate the egg and mix until fully combined.
  • Gradually add in the dry ingredients and mix until the dough is well combined and thick, similar to cookie dough.
  • Spread the thick dough evenly in the prepared baking pan using a silicone spatula or your fingers.
  • Bake in the preheated oven for 15-20 minutes until edges are crispy and the center is slightly gooey. Adjust baking time as needed depending on your oven.
  • Allow the bars to cool completely before frosting (if desired) and cutting into squares. Optionally, decorate with Christmas sprinkles.

Notes

The cookie bars may need longer baking time, so keep an eye on them towards the end of baking.
For added flavor, consider serving with a cream cheese frosting or a simple sugar glaze.
Storing leftovers in an airtight container keeps them soft and delicious for several days.
