- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 and 1/2 teaspoons ground ginger
- 1 and 1/2 teaspoons ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
- 2/3 cup unsulphured molasses
- 3/4 cup hot water
- 1/2 cup unsalted butter (softened to room temperature)
- 1/3 cup brown sugar
- 1 large egg (room temperature)
- 1 teaspoon pure vanilla extract
- 1 cup confectioners’ sugar (sifted)
- 2–3 tablespoons orange juice
Instructions
- Preheat oven to 350°F and prepare loaf pan.
- Combine dry ingredients in a bowl.
- Mix molasses with hot water.
- Cream butter and brown sugar until fluffy.
- Fold dry ingredients into wet ingredients alternately with molasses mixture.
- Pour batter into prepared pan and bake for 50–60 minutes.
- Let cool, prepare glaze, and drizzle over loaf before serving.
Notes
Store tightly wrapped at room temperature for up to 3 days.
Can refrigerate for up to 5 days or freeze slices for up to 3 months.
Use room temperature ingredients for better mixing.
