- 8 ounces uncooked pasta
- 4 strips thick-cut bacon
- 1/2 medium onion (chopped)
- 4 cloves garlic (minced)
- 1/4 cup dry white wine
- 1/4 cup tomato paste (double concentrated)
- 1 cup heavy/whipping cream
- 1/2 teaspoon Italian seasoning
- 1/2 teaspoon crushed red pepper flakes (or to taste)
- 1/2 cup freshly grated parmesan cheese
- 1 small handful fresh basil (sliced thin)
- Salt & pepper (to taste)
Instructions
- Boil salted water and cook pasta until al dente, reserving some pasta water before draining.
- Crisp the bacon in a skillet over medium-high heat until done, then drain excess fat, leaving some for flavor.
- Sauté chopped onion until softened, then add minced garlic.
- Pour in white wine and scrape the skillet to lift flavors, then let it bubble for 30 seconds.
- Stir in tomato paste, cream, Italian seasoning, and red pepper flakes to create the sauce; let simmer until thick.
- Mix in crispy bacon and fresh basil, then stir in parmesan cheese until melted.
- Toss cooked pasta in the sauce, adjust with reserved pasta water if needed, and serve.
Notes
For a lighter version, substitute turkey bacon or use gluten-free pasta.
Adjust the spice level with more or fewer crushed red pepper flakes.
For a dairy-free option, use coconut cream instead of heavy cream.
