Description

Ingredients

  • ¾ cup Spinach (fresh or frozen)
  • ½ cup Ricotta
  • ⅓ cup Parmesan Cheese (grated)
  • ¼ teaspoon Fresh Garlic (grated)
  • 2 tablespoons Breadcrumbs
  • ¾ teaspoon Salt
  • ⅛ teaspoon Black Pepper
  • 1 sheet Puff Pastry (9x13 inches)
  • 1 Egg (beaten)
  • 1 tablespoon Seeds (poppy or sesame)

Instructions

  • Thaw spinach and drain thoroughly.
  • Mix spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper in a bowl.
  • Roll out puff pastry and cut into halves.
  • Stuff pastry with spinach mixture and shape into logs.
  • Freeze logs for one hour, then preheat oven to 400°F (200°C).
  • Slice logs into pieces and place on a baking sheet.
  • Brush tops with beaten egg and sprinkle with seeds.
  • Bake for about 25 minutes until golden brown.

Notes

Use fresh or frozen spinach; drain well after thawing.
Add herbs or spices to filling for extra flavor.
Store leftovers in an airtight container for up to 3 days.
