- ¾ cup Spinach (fresh or frozen)
- ½ cup Ricotta
- ⅓ cup Parmesan Cheese (grated)
- ¼ teaspoon Fresh Garlic (grated)
- 2 tablespoons Breadcrumbs
- ¾ teaspoon Salt
- ⅛ teaspoon Black Pepper
- 1 sheet Puff Pastry (9x13 inches)
- 1 Egg (beaten)
- 1 tablespoon Seeds (poppy or sesame)
Instructions
- Thaw spinach and drain thoroughly.
- Mix spinach, ricotta, parmesan, garlic, breadcrumbs, salt, and pepper in a bowl.
- Roll out puff pastry and cut into halves.
- Stuff pastry with spinach mixture and shape into logs.
- Freeze logs for one hour, then preheat oven to 400°F (200°C).
- Slice logs into pieces and place on a baking sheet.
- Brush tops with beaten egg and sprinkle with seeds.
- Bake for about 25 minutes until golden brown.
Notes
Use fresh or frozen spinach; drain well after thawing.
