Ingredients
- Butter (2 tablespoons)
- Onion (1 medium, diced)
- Garlic (3 cloves, minced)
- Frozen Chopped Spinach (1 1/2 cups)
- Fresh Parsley (1/2 cup, finely chopped)
- Feta Cheese (1/2 cup, crumbled)
- Parmesan Cheese (1/4 cup, grated)
- Eggs (2 large, divided)
- Salt (1/2 teaspoon, or to taste)
- Ground Black Pepper (1/4 teaspoon, or to taste)
- Puff Pastry (1 – 10×15 inch sheet)
Instructions
- Preheat oven to 375°F and grease a 12-cup muffin pan.
- Thaw and drain the spinach to remove moisture.
- Sauté the onion and garlic in butter until translucent, then mix in the spinach and cool.
- Combine sautéed mixture with parsley, cheeses, one egg, salt, and pepper.
- Roll out puff pastry and cut into rectangles.
- Press each rectangle into muffin pan, fill with spinach mixture, and fold corners over the filling.
- Brush tops with beaten egg and bake for 25-30 minutes until golden brown.
- Cool for 5 minutes before serving.
Notes
Ensure spinach is well-drained to prevent sogginess.
You can prepare the bites in advance and bake when ready.
