Description

Spinach Puff Pastry Bites bring together earthy spinach, creamy feta, and flaky pastry for a delightful snack or appetizer, perfect for gatherings or casual meals.


Ingredients

  • Butter (2 tablespoons)
  • Onion (1 medium, diced)
  • Garlic (3 cloves, minced)
  • Frozen Chopped Spinach (1 1/2 cups)
  • Fresh Parsley (1/2 cup, finely chopped)
  • Feta Cheese (1/2 cup, crumbled)
  • Parmesan Cheese (1/4 cup, grated)
  • Eggs (2 large, divided)
  • Salt (1/2 teaspoon, or to taste)
  • Ground Black Pepper (1/4 teaspoon, or to taste)
  • Puff Pastry (1 – 10×15 inch sheet)

Instructions

  • Preheat oven to 375°F and grease a 12-cup muffin pan.
  • Thaw and drain the spinach to remove moisture.
  • Sauté the onion and garlic in butter until translucent, then mix in the spinach and cool.
  • Combine sautéed mixture with parsley, cheeses, one egg, salt, and pepper.
  • Roll out puff pastry and cut into rectangles.
  • Press each rectangle into muffin pan, fill with spinach mixture, and fold corners over the filling.
  • Brush tops with beaten egg and bake for 25-30 minutes until golden brown.
  • Cool for 5 minutes before serving.

Notes

Ensure spinach is well-drained to prevent sogginess.
You can prepare the bites in advance and bake when ready.
