- 2 Tbsp dry strawberry jello mix
- 1 cup sugar
- 2 eggs
- 1/2 tsp vanilla extract
- 1/2 tsp almond extract
- 2 1/2 cups all-purpose flour
- 1 (3.5 oz) pkg vanilla instant pudding mix
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 2 cups of white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and prepare cookie sheets.
- In a mixing bowl, cream together the butter, dry strawberry jello, and sugar until fluffy.
- Add eggs, vanilla extract, and almond extract, mixing until well combined.
- In another bowl, whisk together flour, pudding mix, baking soda, baking powder, and salt.
- Gradually mix the dry ingredients into the wet ingredients until combined.
- Fold in white chocolate chips gently.
- Drop rounded dough onto prepared sheets and space them apart.
- Bake for about 10 minutes until edges are golden and centers are set.
- Cool cookies on pans for a few minutes before transferring to a rack.
Notes
Use room temperature butter for the best texture.
Don’t overbake; cookies should be soft in the center when pulled from the oven.
For a more intense strawberry flavor, add chopped strawberries.
