Ingredients

  • 2 lbs ground beef
  • 1 onion (diced)
  • 4 cloves garlic (minced)
  • 28 oz can diced tomatoes
  • 3 cups beef broth
  • 3 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper
  • Salt and pepper (to taste)
  • 2 bay leaves
  • 2 15 oz cans dark red kidney beans and 2 15 oz cans cannellini beans (rinsed and drained)

Instructions

  • Sauté ground beef with diced onion and minced garlic until browned; transfer to slow cooker.
  • Add diced tomatoes, beef broth, tomato paste, Worcestershire sauce, and spices to the slow cooker; mix well.
  • Cook on LOW for 6–8 hours or HIGH for 3–4 hours.
  • During the last hour, stir in drained beans to warm through.
  • Ladle into bowls and garnish with desired toppings.

Notes

Consider using ground turkey or chicken as a leaner option.
Fire-roasted tomatoes can add a smoky flavor.
Add beans towards the end of cooking to maintain their texture.
