Ingredients

  • Super firm tofu
  • Cornstarch
  • Olive oil
  • Brown rice
  • Yellow onion
  • Red pepper
  • Garlic cloves
  • Fresh ginger
  • Coconut milk
  • Red curry paste
  • Soy sauce
  • Coconut sugar
  • Spinach
  • Cilantro
  • Lime juice
  • Salt

Instructions

  • Press the tofu to remove excess moisture and cut into cubes.
  • Coat the tofu in cornstarch.
  • Heat olive oil in a skillet and fry the tofu until golden.
  • Sauté onion and red pepper until soft.
  • Add garlic and ginger, cooking until fragrant.
  • Mix in red curry paste and cook briefly.
